As summer rolls in, you can enjoy this quick and easy meal! You can substitute any of the ingredients!
Easy Enchiladas
In the blender mix:
1 can of Low Sodium Cream of Mushroom Soup
1 can of Low Sodium Cream of Chicken Soup
1/2 Cup of water
2 Garlic Cloves
1/2 Onion
1 handful of baby spinach
Mix ingredients together in a blender; set aside
Sauté in a medium pan:
1 Green pepper1/2 tomato Green onion
chicken (or substitute with portabella mushrooms)
Next, in a casserole dish roll sautéed ingredients and shredded cheese in whole wheat flour tortilla. Lightly pour blended ingredients over the tortillas and add some shredded cheese. Place in a casserole dish in a pre-heated oven (set at 400 degrees). Bake for about 20 minutes and enjoy!
